I’ve been putting off posting this one to be honest. Vegan things have SUCH a bad rep.
If I was vegan, this is the sort of stuff I’d eat. None of that processed nonsense.
So, get on this, vegan or not. I’m not suggesting it’ll replace your full English, because it won’t, but you can definitely turn to this if you’re after something slightly lighter.

Recipe

WHAT YOU’LL NEED (or just do what you want here)
1 small vine of cherry tomatoes
Spinach, cooked however you like
Homemade baked beans
Scrambled tofu
Toast, to serve

THE TOFU ‘BACON’
1/4 block firm tofu, finely sliced
2 tbsp soy sauce
Juice of 1/4 lime
1/4 tsp smoked paprika
1 tbsp maple syrup

Method

  1. First, slice your tofu finely, then add to a flat bowl/ a plate with sides, and add all your marinade ingredients, coating the tofu in them completely. Set aside to marinade.

  2. Prepare your beans as to the recipe - link to them is above.

  3. Cook your veg as you like - I baked by tomatoes in the oven at 190°C for about 15 minutes, until blistered, and then start to catch, then microwaved my spinach with a squeeze of lemon juice and salt.

  4. When you’re ready to serve, prepare your tofu scramble in one frying pan, then fry off your ‘tofu bacon’ in another pan, in oil.

  5. Plate everything up - your beans, veg, tofu bacon, tofu scramble & toast, and serve with any sauces you fancy!!!!

Notes + Variations:

You could also have this with tempeh, or even just supermarket vegan subs - just do whatever you fancy, and whatever works best for you.
