My mum used to make these ALL the time. We went through a brekkie phase of beans and eggs, and nothing else. Homemade beans, when done properly, are elite, but get yourself some proper beans.

Recipe, serves 4-5;

1 white onion, half diced, half sliced
1 garlic clove
2 tbsp oil
8 sundried tomatoes
1/2 tsp salt
1 tsp sugar
2 dried chipotle chillis
800g tinned tomatoes
2 tbsp pomegranate molasses
2 tbsp balsamic
1 tbsp bbq sauce
1 bay leaf
1/2 tsp turmeric
1/2 tsp onion salt
1/2 tsp garlic powder
1/2 tsp smoked paprika
Pepper
Salt
300g beans (we used chickpeas, butter beans
and haricot beans)
1/2 tsp veg stock
200ml water

Method

  1. Cut the onion, half finely diced, half sliced.

  2. Add to a pan with 2 tbsp oil, garlic and sugar

  3. Leave to simmer until the onions begin to caramelise

  4. Add the sundried tomatoes, tinned tomatoes, salt, molasses, balsamic, bbq sauce, bay leaf, the whole, dried chillis and the spices.

  5. Simmer for 10 mins.

  6. Add the beans of choice and the stock, dissolved in water. Simmer for another 20 mins - season to taste

  7. Serve with eggs, or just on toast with avocado.

Notes + Variations:

Switch out for any beans you have in the cupboard, and if you don’t have this EXTENSIVE list of ingredients in the house, then honestly, just go for the garlic, onion, oil and spices. You can make these your own.
