High protein cookies

Now, there’s NOTHING wrong with regular cookies, but I wouldn’t mind having a cookie at every minute of the day, even breakfast, I don’t know about you.
So, here’s a 5 ingredient recipe, which literally anyone can make.

Full of protein and healthy fats too, so you can have a healthy, satisfying on the go snack.

Recipe, makes 4-6;

80g smooth nut butter (4 tbsp)
60g protein powder
20g syrup - maple is best
Splash of milk
50g chocolate, chopped into chunks

Method

  1. Preheat your oven to 170°C.

  2. Mix your nut butter, protein powder and syrup in a bowl.

  3. Combine until you have something that is beginning to resemble a dough - it may be quite dry, so add a splash of milk too.

  4. Once you’re happy with the consistency, and it’s like a cookie dough that you can pick up, chop your chocolate into chunks.

  5. Mix the chunks into your cookie dough mixture, then separate the dough into 5-6 balls.

  6. Flatten them out onto a lined baking tray, then use a cookie cutter to make sure the edges are uniform.

  7. Bake for 15-20 minutes, until they’ve started to go golden brown and crunchy, then remove from the oven and leave to cool.

  8. Sprinkle with maldon salt, then keep in an airtight container for up to 1 month.

Notes + Variations:

Use any protein and any nut butter in these, and change the flavours up as you want. I also crumble these up for a quick granola sometimes, and it’s SO good.
