Strawberries and cream baked oats

Wimbledon came around, and strawberries turned super sweet, so here we are. Had to baked oats it, in my usual style.
I’d always recommend using whey protein in your baked oats, as it dramatically improves the texture, but just give me a message if you don’t have any, and i’ll tell you what you can change.
These only take 5 mins to prepare, and around 20 mins in the oven, so a perfect breakfast for when you have a lil more time.

Recipe

3 tbsp oat flour
1 tbsp vanilla whey protein powder
1 tsp sugar, or equivalent sweetener
80-100ml milk
1/2 tsp baking powder
Pinch of salt
1 tbsp plain cream cheese or yoghurt (for the centre)
1-2 strawberries, sliced (to top)
Honey/ peanut butter to top

Method

  1. Preheat the oven to 170°C.

  2. In a bowl, mix your oat flour, protein powders, sugar, baking powder and milk, until you have a cake batter consistency - add your liquid bit by bit, so you don’t add too much.

  3. Once you’re happy with the consistency, put 3/4 of your batter into your oven proof dish/ ramekin, then add 1 tbsp cream cheese to the centre.

  4. Top with the remaining batter, making sure your cream cheese is covered up, then top with a couple of strawberry slices and bake for 20 minutes, or until risen and almost firm to the touch.

  5. Remove from the oven and leave to rest for a few minutes until slightly cooled, then top with honey or peanut butter and serve.

Notes + Variations:

You can use any fruit, and any yoghurt for this - just sub things out as you like.
