This literally is the same as an apple crumble you’d have for dessert, except there’s a lot more fibre, and It’ll most likely keep you fuller for longer, especially if you make the ‘custard’ with protein powder. Protein keeps you fuller for longer, if you didn't know that already, as it’s the hardest macronutrient to break down, so eat more of it basically!

Recipe, makes 1 single serve crumble;

THE APPLE
1 apple
1 tbsp sugar
1/4 lemon juice

THE CRUMBLE
1 tbsp oat flour
1 tsp vanilla protein or 1 extra 1 tsp oat flour
1 tbsp flour
1 tbsp oats
1 tbsp sugar
1 tsp syrup
1 tbsp smooth nut butter
Sprinkle bicarb
Sprinkle salt

THE CUSTARD
2 tbsp cream cheese
1 tsp vanilla
1 tbsp syrup
50ml milk
Or
1/2 scoop vanilla protein
Warm water until you have a custard consistency

Method

  1. Peel apple with a potato peeler and cut into cm cubed pieces ish.

  2. Put in pan on low heat with the sugar and lemon juice and cover for about 10-15 mins

  3. Mash with potato masher when the apple is soft enough

  4. Preheat the oven to 190°C

  5. Mix crumble ingredients together in a small bowl - if you don’t have pre-bought oat flour, blend up 2 cups of oats until they look like flour and measure out

  6. Put the apple mix in an ovenproof dish, top with the crumble

  7. Bake in the oven for 15 mins

  8. Mix your custard ingredients together and whisk well until all lumps are gone

  9. Put in the microwave in 10 second intervals until just warm - don’t overheat or it will split

  10. Pour the custard over and enjoy

Notes + Variations:

To make this whole thing quicker, make my crumble granola, and have some pre-cooked apple in the fridge at all times, then add some of your apple to a serving dish, top with crumble granola, and microwave for an instant crumble. Simple as that.
