Triple chocolate cookies/ biscuits

I say cookies/ biscuits, because you can make them to be either - just bake them for less time if you want the chewy cookie texture.
These are actually vegan too, and are made with almond butter, so lots of healthy fats, because we love glowing hair, skin and nails.

Recipe, makes 8 mini cookies;

3 tbsp smooth almond butter
5 tbsp sugar (I used coconut)
Splash plant milk
1 tsp vanilla
1 heaped tbsp plain flour / buckwheat flour
1 heaped tbsp cacao powder
1/4 tsp bicarbonate of soda
Pinch of salt
1 tbsp syrup
Small handful chocolate chips

Method

  1. Preheat the oven to 150°C

  2. Mix together the almond butter and sugar until a paste forms

  3. Add a splash of plant milk and the vanilla and mix through well

  4. Add all the dry ingredients and mix well

  5. Add the syrup and a couple of chocolate chips and combine until a dough forms

  6. Roll into a ball, cut in half, then half again, and in half again. You’ll have 8 balls of dough, roll them out, press them down, and press some chocolate chips into the top.

  7. Place onto a lined baking tray and bake for 5 mins at 150 degrees Celsius

  8. Turn the oven up to 200°C, and bake for another 5 mins

  9. Remove from the oven, leave to cool slightly and serve with milk

Notes + Variations:

My favourite sugar is coconut sugar, as is rich and deep in colour and flavour, resulting in a more caramelly taste, but you can use the average, plain Jane sugar too.
