This is probably my FAVOURITE oat creation. It’s just so bloody good. You can tell it’s not tiramisu, and it’s a lot less sickly, but this emulates everything that’s great about the Italian dessert - the soaked, soft but bitter and sweet biscuit, the cream that cuts through, and that chocolatey top. This is meal prep made FUN, that’s for sure :P

Recipe, for 2 pots;

THE ‘LADY FINGER’
4 tbsp fine oat flour
20g vanilla whey protein powder
1/2 tsp baking powder
100-150ml milk

THE CREAM LAYER
500g greek yogurt
Sweetener of choice - I used stevia drops, but you could use maple syrup

TO TOP
Cocoa powder
Optional: grated chocolate

Method

  1. Add all the ingredients for the lady fingers to a bowl, mixing until you have a cake batter consistency.

  2. Cook these like pancakes the size of your palm in a pan, setting aside.

  3. Prick each pancake with a fork all over, then brew a shot of espresso and spoon 1-2 tbsp of coffee over each pancake. Leave this to soak for a few minutes, then cut each pancake into 3 strips.

  4. Mix your yoghurt with sweetener of choice and vanilla, adjusting to taste, then layer your yoghurt with your pancake fingers in your serving jars/ bowls, finishing with a layer of yoghurt and cocoa powder.

  5. Top with shaved chocolate if you’d like, and store in the fridge for up to 4 days.
