Tarte tatin crepe cakes
Not sure where this idea came from, but it was very tasty indeed. It surprisingly didn't take long either, maybe 15-20 mins max. Try it out.
Method
Thinly slice your apple and add to a pan on medium-low heat. Stir and cover with a lid for about 5-10 minutes until the apples begin to soften.
Remove the lid and add a splash of water and the spices - then spread the apples across the base of the pan and leave to cook for another 5-10 mins until they start to caramelise.
Meanwhile, add all of the crepe ingredients to a blender and blend until very smooth - the batter should be the consistency of double cream - you can add more flour/ more milk if you haven’t reached that
Grease a small frying pan on medium-low heat, and when hot, add 2 tbsp of the batter to the pan and move the pan around so the batter covers the bottom of the pan and flip when bubbles pop on the surface and the crepe becomes matte.
Repeat with all the crepes, and set aside on a board or plate. Continue to check the apples whilst you cook your pancakes.
Line the bottom of a flat bowl with parchment, and lay the apples along the bottom so you can see none of the parchment.
Mix the cream cheese, sweetener of choice, and vanilla together
Add 1 tsp of cream cheese mix onto 1 crepe - spread evenly.
Place the crepe ontop of the apple slices - you may need to add small cuts around the edge of the pancake to make sure it easily fits into the bowl
Repeat with all the other crepes - adding the custard creme to each one and stacking them into the bowl
When you have no crepes left, or the bowl is full with pancakes, put into the fridge and leave to set for atleast 2 hours or overnight.
Serve with yogurt or ice cream.
Notes + Variations:
You can make this with apples or pears, it works with either and is DELICIOUS with both.
