Chocolate chip cookie in a pot

A warm, melting, chocolate chip cookie. Have it to yourself, or share it for dessert. Such an easy lil sweet treat.

Recipe

1 tbsp softened butter
1 tbsp soft brown sugar
1 tbsp caster sugar
1 egg yolk
1/2 tsp vanilla
1 heaped tbsp flour
Tiny sprinkle of bicarbonate of soda
Pinch of salt
2 tbsp chocolate chips

Method

  1. In a mixing bowl, add your softened butter and sugar, creaming together with the back of a spoon.

  2. Add your vanilla and egg yolk, mixing together until smooth.

  3. Add your flour and bicarbonate of soda, mixing until you have a smooth cookie dough - don’t over mix, or you’ll end up with a cake consistency.

  4. Add 1 tbsp chocolate chips & fold through.

  5. Refrigerate your cookie dough for 10 minutes, in the meantime, preheat your oven to 170°C.

  6. Add your cookie dough to an ovenproof ramekin/ small ovenproof bowl.

  7. Smooth the cookie dough out, then top with the other tbsp chocolate chips.

  8. Bake for 12-15 minutes, until slightly risen & golden brown.

  9. Remove from the oven and set aside for a couple of minutes to rest.

  10. Sprinkle with maldon salt and serve.

Notes + Variations:

If you want to make this vegan, skip the egg yolk, and use a splash of milk instead. Sub out the butter for vegan butter.
