Single serve chocolate chip cookie

Got some new milk chocolate from Hu, and what better way to try it out than this?
Devoured the whole thing in one sitting, like a true champ.
This takes less than 15 mins to whip up by the way, so it’s the perfect snack when you’re craving something sweet.

Recipe

1 tbsp smooth cashew butter
1 tbsp coconut/ brown sugar
1 tsp caster sugar
Splash milk
1 tsp almond flour
1 tsp plain white flour
Splash Vanilla
Tiiiiiiny sprinkle bicarb
2 squares milk chocolate

Method

  1. Preheat the oven to 170°C.

  2. Whip together the sugar and cashew butter until you have a fluffy paste.

  3. Stir through the vanilla and the milk, then add in the flour and bicarbonate of soda.

  4. Stir well, then press the dough into a ball in your hands.

  5. Press down onto a lined baking sheet, so you have a cookie about 1-1.5cm thick.

  6. Bake for 12 minutes, leave the cookie to rest for a couple of mins to set + become firmer, then sprinkle with sea salt and serve on its own or with ice cream.

Notes + Variations:

Swap the milk chocolate out for any chocolate you fancy.
You can also use whichever smooth nut butter you have - I just prefer cashew butter for recipes like this, as it has the most buttery flavour.
