I used to roll my eyes when people would rave about these, but I TAKE IT BACK. I think it was Starbucks that started this, and honestly, hats off to them.

Honestly, these saved my life last week. I was out loads, and it took the stress out of my eating so much - I just popped 3 or 4 of these in my bag every day, and it meant I was getting fuelled with protein, and veggies, which is actually really hard to do when you’re on the go.

These are better than just taking a boiled egg anywhere. No smell, you can get your veggies in, and there’s absolutely no mess. Also, you season them how you like, and they’re so so so delicious to eat on their own, and not claggy like a boiled egg would be.

Recipe, makes 6-8 bites

4 eggs
1/2 red pepper, finely diced
1 handful spinach
Spices of choice - I used garlic powder
Salt and pepper
Optional: any other veg of choice / cheese

Method

  1. Preheat the oven to 180°C.

  2. Chop your veg of choice.

  3. Crack your eggs into a mixing bowl, whisking well with your spices.

  4. Add your veg & mix well.

  5. Pour the egg mixture evenly between 8 lined cupcake holes.

  6. Bake for 12-15 minutes, or until they appear risen, and cooked through.

  7. Remove from the oven and leave to cool slightly - they’ll sink.

  8. Add to a Tupperware/ airtight container and refrigerate for up to 4 days.

Notes + Variations:

Add any veggies you want to this, but I wouldn’t skimp on the red pepper.
