Fried goats cheese with crispy sage and honey

Jane Eyre in Manchester did this as part of their seasonal menu, and hats off to Arthur, the creator of this. It was absolutely incredible.
Crispy fried goats cheese, crispy sage, doused in honey. Hmmmmmmmmmmm.

Recipe

1 block goats cheese (mine was 180g)
1 tbsp honey
Chilli flakes
2 leaves sage
1 egg
5 tbsp plain flour
100ml oil for frying

Method

  1. Whisk your egg, then dip your goats cheese in it until it’s covered

  2. To a plate, add your flour, and flatten it out. Dip the cheese in the flour to coat all the sides.

  3. To a deep frying pan, add 100ml neutral oil, and leave on medium heat, until the surface begins to appear slightly uneven, or a tiiiiiny splash of water reacts with it

  4. Carefully place your flour + egg coated cheese in the oil, then allow it to crisp up and brown, then carefully flipping over to get the same on the other side.

  5. Carefully roll the cheese over onto its sides, to ensure every side has been fried evenly.

  6. When the cheese is almost done, add your sage leaves to the hot oil, allowing to crisp up and appear darker in colour

  7. Once the cheese is cooked, remove that and the sage, pat it with kitchen towel to remove excess oil, then plate up.

  8. Add 1-2 tbsp runny honey to the top, then top with your sage and chilli flakes and serve

Notes + Variations:

You can use any honey for this - I’ve seen pre-made hot honey & some truffle honey too, which I think could work very very well.
