Chocolate orange cookie sandwich

Inspired by the greatest, Gooey, because they started doing cookie sandwiches as specials, more specifically an apple crumble one, and it was so bloody good.
You can find chocolate orange pots in the plant based section of supermarkets normally, or here. The one I used was discontinued, but any will work.

Recipe, makes 1;

THE COOKIE
3 tbsp chocolate protein powder*
2 tbsp smooth almond butter
1 tsp cocoa powder
1 tbsp syrup
Splash plant milk
Pinch of salt

TO FILL + TOP
1 chocolate orange pot
40g dark chocolate (get money off hu with code ‘BBB‘)
Orange rind

Method

  1. Preheat the oven to 180°C

  2. Mix all the cookie ingredients together until you have a ball of cookie dough

  3. Separate into 2 and flatten onto a lined baking tray, until each cookie is about 8-10cm in diameter and about 1.5cm thick

  4. Bake for 12 mins then leave to cool

  5. When cool, flip the cookies over, add the chocolate orange pot onto one of the flat sides and put the other cookie ontop

  6. Melt your dark chocolate, and cover the top half of the cookie sandwich in it.

  7. Finish with orange rind and sea salt, and leave to cool for at least 30 mins.

Notes + Variations:

* You could use any protein powder here - whether its vegan or not shouldn’t affect the outcome.
