Chocolate-Hazelnut breakfast donuts

These are some of my faves for a rushed morning. Pop ‘em on top of a yogurt bowl, or take 2 as an on the go breakfast.

Whey protein is pretty essential for the texture of these, so sadly they aren’t vegan.

The link for the special ingredients and donut mould can be found in the notes section - it’s silicone, which is ideal, as you can microwave the donuts too.

Recipe, makes 6-8;

8 heaped tbsp oat flour
60g chocolate whey protein powder
2 heaped tbsp hazelnut butter
200ml hazelnut milk (or normal)
50ml chocolate milk
1 tbsp yogurt
1 tbsp cacao
2 tbsp sugar
Pinch salt
1 tsp baking powder
1/4 tsp bicarbonate of soda

Top...
3 tbsp cream cheese
1 tbsp hazelnut butter
50ml hazelnut milk
2 tbsp syrup
50g melted chocolate

Method

  1. If you don’t have oat flour, blend 3 cups of oats to a fine flour, then measure out 8 heaped tbsp into a mixing bowl.

  2. Preheat the oven to 180°C

  3. Add all the dry ingredients to the bowl with the oat flour. Mix well, then add all the wet ingredients.

  4. Combine until a cake-like mixture forms

  5. Bake for 12-15 mins

  6. Take out and microwave for 2 mins at 1000W, in your silicone donut mould

  7. Whisk all the topping ingredients until they have formed a smooth, drizzlable icing

  8. Allow the donuts to cool for a few mins, then spoon over the icing so it coats the tops

  9. Top with crushed roasted hazelnuts and serve
