This is actually vegan if you use vegan yogurt, and is one the best banana breads I’ve ever made. So so good.

Recipe

THE CAKE
2 ripe bananas
1/2 cup blueberry yogurt
1 tbsp honey
1 cup self raising wholemeal flour
1/2 cup almond flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/3 cup blueberries
Salt

Method

  1. Preheat your oven to 180°C.

  2. Mash your ripe bananas up in a bowl.

  3. Mix through the yogurt, then add the flours, a pinch of salt, the raising agents and syrup.

  4. Mix everything well and then bake at 180°C for 45 mins, or just over, until spongey when touched.

  5. Leave to cool, then top with blueberry yogurt and fresh blueberries.

  6. Store in the fridge for up to 5 days.

Notes + Variations:

You can sub the blueberries out for any other berry & the same with the flavour of yogurt - make it your own.
