This is one recipe I make every SINGLE week, without fail. It’s safe to say it’s an addiction.
One of my favourite ways to have it is with warm milk - it’s like a bowl of warm apple custard, and the TEXTURE. I can’t even explain how good this is, and it’s way funner than a standard bowl of oats.

Recipe

4 tbsp oat flour (oats blended until they resemble flour)
4 tsp vanilla protein (or more oat flour)
4 tbsp flour
4 tbsp oats
4 tbsp sugar
6 tsp syrup
6 tbsp smooth nut butter
Sprinkle bicarb
Sprinkle salt
Sprinkle of cinnamon and nutmeg

2 apples, sliced into thin slices, then cut into 3 or 4

Method

  1. Preheat the oven to 180°C

  2. Mix all the dry ingredients together, add the peanut butter and syrup and stir until the mixture starts to resemble the top of a crumble

  3. If you need to, add a splash of plant milk so that the mixture combines fully

  4. Cut up your apple into thin slices, then into 3 or 4 pieces

  5. Spread the apple evenly over a small baking tray, put in the oven for 20-30 mins until it starts to go golden, leave them to cool

  6. Spread the granola over a baking tray and bake for 30 mins in 10 minute intervals until golden brown

  7. Leave to cool, then add to a jar with the crispy apple pieces

  8. Serve with milk or ontop of yogurt

Notes + Variations:

You can use vegan protein powder, or miss the protein powder out all together, and sub it for oat flour, and a bit more sugar.
You can also make this any flavour, by adding any freeze dried fruit - just don’t bother with the apple.
