Pumpkin spice pancake cereals

Right. This was a trend in the 1st covid lockdown, and it genuinely is very very good. Make them and tell me they aren’t better than normal pancakes. I’d take them over a typical pancake stack any day. Maybe it’s the fact that they’re mini? Or the texture with milk? Something about it just works.
You’ll need a squeezy bottle and a non-stick frying pan to make your life easier - you’ll wind yourself up otherwise.

Recipe

2 heaped tbsp wholemeal self raising flour
1 egg , or 2 egg whites
1/2 ripe banana
1/2 heaped tsp pumpkin spice
1 tbsp sugar or sweetener of choice
Pinch salt
Drop milk

Method

  1. Add everything to a blender and blend until smooth (if you don’t have a blender, just mash your banana really well and whisk everything together)

  2. Add the mix to a squeezy bottle

  3. Grease a pan and put onto medium-low heat, squirt the pancake mix on into circles of about the size of a 2 pence

  4. When they start to bubble, carefully flip with a knife or a mini spatula

  5. Add to a bowl, repeat, then top with nuts, nut butter and milk

Notes + Variations:

If you don’t have a squeezy bottle, you can just measure out the mixture with a spoon onto the pan, but it may be a lil bit of a struggle (just warning you).
