I know it’s summer when the aperol starts rolling in again, and thought many of you may want this recipe for over the weekend, so here you are.
Frozen aperol topped with a healthy splash of Prosecco. I’m only ever making aperol like this from now on.

Recipe, makes 2

100ml aperol
8 ice cubes
80ml soda water
Prosecco to top
Slice of orange to serve

Method

  1. Add your aperol and ice to a blender with your soda water.

  2. Blend until you have the consistency of a slushy.

  3. Pour into 2 glasses, then top off with your Prosecco.

  4. Top with a slice of orange & serve.

Notes + Variations:

You could also use any other spirit you want - Campari and limoncello are the bestttttttt.
