Vegan brownie with PB and J froyo

This only takes 15 minutes, has 5 ingredients, and the result is a warm chocolate brownie, with peanut butter frozen yogurt. It’s the PERFECT post dinner sweet treat.

Recipe

THE BROWNIE
60g dark chocolate
2 heaped tbsp sugar/ equivalent sweetener of choice
1 tbsp cocoa butter or 1 tsp butter
2 tbsp diary free yogurt
2 heaped tbsp almond flour

THE FROZEN YOGURT
4 tbsp strawberry yogurt
1 tbsp peanut butter
Sweetener drops to taste/ small drop syrup

Method

  1. Preheat your oven to 170°C.

  2. Mix your yogurt, peanut butter, and sweetener drops together until you like the taste, then put in the freezer whilst you make your brownie.

  3. Melt your chocolate and cocoa butter/ normal butter together in your microwave until completely melted together.

  4. Add your sugar and mix through well, then stir through your dairy free yogurt.

  5. Add your almond flour, and stir well until you have a brownie batter.

  6. Pour into your single serve dish, then bake for 7-10 minutes until risen slightly around the edges.

  7. Allow to rest for 10-15 mins is it settles in the middle, and is not too hot.

  8. When ready to serve, take your yogurt out of the freezer, mix well with a spoon, then spoon over your brownie, top with peanut butter and serve.

Notes + Variations:

Use pre-made frozen yogurt/ ice cream for this too - you don’t have to make your own.
Also, don’t stress if it doesn’t freeze in time - you can always microwave your brownie to warm it up when the yogurt is frozen, or just eat the yogurt when it isn’t frozen - it will still taste nice.
