Single serve chocolate cookie

Was genuinely surprised at how well this came out. I’d like to say I have gotten pretty good at cookie recipes, if I do say so myself.

Recipe, makes 1;

1 tbsp smooth almond butter
1 tsp coconut sugar
1 tsp white sugar
1/2 tsp vanilla
1 tbsp milk
1 tsp cocoa powder
1 heaped tsp plain flour
1/6 tsp bicarbonate of soda
1 tsp syrup
1 tbsp chocolate chips

Method

  1. Preheat the oven to 170°C

  2. Whip together the sugar and almond butter until you have a fluffy paste.

  3. Stir through the vanilla and the milk, then add in the flour, cocoa powder and bicarbonate of soda.

  4. Stir well - it will be very floury, but then add 1 tbsp syrup and mix through until you have a cookie dough, then stir through the chocolate chips.

  5. Roll into a ball and press down onto a lined baking sheet, so you have a cookie about 12-15cm in circumference, and 1-1.5cm thick

  6. Bake for 12 minutes, leave the cookie to rest for a couple of mins to set + become firmer, then sprinkle with sea salt and serve on its own or with ice cream.

Notes + Variations:

You can actually use any nut butter, but almond butter works best texture wise, as it’s quite runny. It also compliments chocolate really really well.
