Roasted radish with lemon and garlic cream
Inspired by a dish I had at a restaurant; for some reason, I thought roasting radishes would be weird, but they are actually delicious, and more closely resemble courgette when roasted.
Method
Cut the tops off the radishes and wash them well
Preheat the oven to 170°C
In a bowl, combine the radishes and whole, peeled garlic cloves with the honey, oil and herbs and spread over a baking tray. Roast for 50 mins, turning over halfway
Add the cream cheese mix ingredients to a small bowl and mix well- season to taste
Spread the cream cheese over a plate and top with the roasted radishes.
Season with fresh thyme and salt and pepper
Notes + Variations:
You can swap the cream cheese out for your favourite vegan cream cheese to make this vegan.
