Myles’ filo feta parcels

My friend Myles did a very good job of describing these to me. So much so, that I made them probably 3 months after he’d told me about them.
Feta, covered in olive tapenade and harissa, then wrapped up in filo pastry, topped with sesame seeds & honey. I mean, it can’t be bad.
Myles oven baked his, but told me mine looked better air fried. Oven baked sounds good to me, so don’t stress if you don’t have an airfryer.

Recipe, makes 2 parcels;

200g feta
2 sheets filo pastry
Oil/ butter to brush
2 tsp harissa
2 tsp olive tapenade
Sprinkle sesame seeds
Honey to top

Method

  1. Chop your block if feta in half, diagonally.

  2. Spread olive tapenade across the top, then stick it down onto a sheet of filo.

  3. Top with 1 tbsp harissa and spread over.

  4. Wrap the feta in the filo, and seal with olive oil.

  5. Brush the top with olive oil, and sprinkle with sesame seeds.

  6. Repeat with both pieces of feta.

  7. Air fry at 180 for 6-8 minutes, until the pastry is golden brown and crisped up. (if oven baking them, bake for 12-15 minutes at 200°C, flipping halfway - they may need longer than this).

  8. Top with honey, fresh herbs, and serve.

Notes + Variations:

My favourite harissa ever is apricot harissa, but you can use any that you have.
