This was yet another trend that I was late to, and I was reluctant to try, but it was actually so so so good, and pretty similar to stuff I’ve made in the past.
I actually used firm tofu in place of chicken for this, and it was DELIGHTful. A very good & quick little week night tea.
Method
First, prepare the tofu - break into bitesize chunks & place in a bowl, or cut your chicken into chunks.
Add your yoghurt, tomato puree, vinegar & salt, then set aside.
For your sauce, finely slice your sundried tomatoes & garlic, then add 1 tbsp of oil to your deep frying pan on medium - low heat, adding your garlic and sundried tomatoes once hot, allowing them to fry.
Once the oil has gained a red tint, add a couple of tbsp of yoghurt to the pan, along with your stock dissolved in water.
Add 1 tbsp tomato puree, season with salt and pepper, then leave to simmer on low heat.
To a separate frying pan, add 1 tbsp of olive oil on medium heat. Once hot, add your marinated tofu/ chicken, frying on each side until browned, or until your chicken is fully cooked - allow some bits to blacken too - this is just the tomatoes caramelising.
Once your tofu/ chicken is cooked on all sides, add to your sauce - if your sauce is too thick, add a splash more water.
Allow your sauce & protein to cook together for a couple of minutes, then prepare your bread to serve - we just fried ours in a pan with 1 tsp of butter.
Season your sauce, then add to your serving bowl.
Top with a drizzle of olive oil, fresh herbs & serve with your sourdough.
Notes + Variations:
Swap the tofu for chicken, salmon, or any other protein. The original recipe calls for chicken, but tofu worked wonders.
