Jaffa cake breakfast donuts
These are some of the best donuts I’ve made. The resemblance to a Jaffa cake is uncanny.
Method
Preheat the oven to 190 Celsius
Blend 2 cups of oats to a fine flour, then spoon 8 tbsp of the oat ‘flour’ into a bowl.
Combine the dry ingredients: oats, baking powder and bicarb, vanilla protein, and sugar.
Add the wet ingredients: milk, yogurt, vinegar, and cashew butter and mix well. It should look like cake batter- you may need more milk or more oat flour depending on ingredients used. Add a pinch of salt and mix.
Grease 8 silicone donut holes, or 6 muffin cases and line with muffin tins
Divide the mixture evenly between the holes, then bake for 12 minutes.
Microwave for 1 minute at 1000W
Melt 100g chocolate, and mix 4 tbsp marmalade with a splash water in a separate bowl.
When the donuts are cool, dip them upside down in the marmalade so that they get a good coating
Leave to rest for a minute, then spoon over the melted choc and top with orange rind
Leave to set or eat straight away.
Variations:
Use a different nut butter/ seed butter, but make sure its smooth.
Use any flavoured smooth marmalade - orange makes it taste most like a Jaffa cake.
Use milk, dark, or white chocolate.
