Healthy chocolate brownie pots

I made these for manilife for valentines day, so please ignore the love hearts. They were too good to not post, so here we go, weeks after valentines.

Recipe, makes 2 pots;

60g dark chocolate
1 egg
1 tbsp brown/ coconut sugar
1 heaped tbsp plain wholemeal flour
1 big tbsp manilife cocoa smooth peanut butter
Splash boiling water
Pinch salt

THE TOP
4 tbsp berry/ plain yogurt (if using plain, mix through some crushed berries, or freeze dried berries for colour)
Optional: Love heart sprinkles

Method

  1. Preheat your oven to 180°C.

  2. Melt your chocolate in a microwave safe bowl.

  3. Add your egg and mix with the chocolate well, so you have a silky texture.

  4. Add your coconut sugar, mixing through well, followed by your flour.

  5. Add your cocoa peanut butter, and a splash of hot water, mixing until you have a smooth brownie batter.

  6. Divide your batter evenly between 2 pots/ ramekins, and bake for 12-15 minutes, or until the brownies are firm, but still slightly squishy in the middle.

  7. Leave them to cool.

  8. Once cool, top with your yogurt, then evenly place your sprinkles ontop (if using).

  9. Keep in the fridge for up to 5 days in an airtight container.

Notes + Variations:

Make these vegan by swapping the egg out for a flax egg, it won’t make a difference.
