Mini cookie skillet

I’m still in shock at how good this came out, and have made it many a time since.
If you can’t tell, cookies are one of my favourite desserts, so I’m making them in every form.

Recipe

2 tbsp smooth almond butter
2 tbsp brown sugar or coconut
1 Tbsp milk
Vanilla
1 tbsp buckwheat flour or plain flour
1 tbsp syrup
Pinch salt
1/8th tsp bicarbonate of soda
1 tbsp choc chips

Method

  1. Mix together the almond butter and sugar until you have a paste. Add the vanilla and 1 tbsp milk.

  2. Add the flour, salt and a sprinkle of bicarb and mix through well until you have a floury dough

  3. Add the syrup and mix well until you have a cookie dough

  4. Add the chocolate chips, press into a skillet or oven safe dish and put in the freezer for a couple of mins.

  5. Preheat the oven to 170°C

  6. Add the Skillet/ dish to the oven when preheated and bake for 10 mins

  7. Remove from the oven, then turn up to 200°C

  8. Press down the middle of the cookie with your fingers, add some more chocolate to the top, and bake for another 5-10 mins

  9. Remove when it’s slightly risen and going golden brown.

  10. Press down the middle with your fingers again and leave to sit for a couple of minutes

  11. Serve on its own or with milk/ ice cream

Notes + Variations:

Use any nut butter you want, and any chocolate you want - it will obviously just slightly change the flavour.
