I feel like i’ve seen these flying about for a while, so I knew what I had to do.
You can make these in a big batch too, and have them ready to eat in the fridge, for the perfect quick breakfast in the week. This is my idea of meal prep - it doesn’t have to be just chicken & rice.

Recipe

1/2 cup oats
2 heaped tbsp oat flour
1/2 cup milk
1 tbsp cashew butter
30g vanilla protein powder, or 1 tbsp syrup + 1 tsp vanilla
Pinch salt
1 tbsp chocolate chips

Method

  1. Mix your oats and milk together, with a pinch of salt.

  2. Microwave for 30 seconds, then stir well, and microwave for another 30 seconds.

  3. Once your oats have thickened, stir through your cashew butter and protein powder, until there are no lumps left.

  4. Leave to cool in the fridge, in your serving bowl, or in a jar with a lid.

  5. When you’re ready to serve, stir through your chocolate chips.

Notes + Variations:

Miss out the oat flour if you don’t have any - alternatively, blitz your oats for a couple of seconds so they’re slightly finer - this will give them the cookie dough texture.
