Cookie dough baked oats
I’ve been meaning to do these properly for a long long time, and they were so so so good. The key for the top is to use chocolate chips - I had used chocolate chunks in the past, but they never held their shape. You can make these vegan and gluten free very very easily too.
Recipe
1/2 banana, mashed
3 tbsp oat flour
1 tbsp vanilla (ideally whey) protein powder
1 tbsp smooth cashew butter
Splash milk
1/6th tsp bicarbonate of soda
1/4th tsp baking powder
Chocolate chips (to top)
Method
Preheat the oven to 170°C.
Mash your banana, mix through your cashew butter, then combine with your protein powder and oat flour, and a splash of milk, a pinch of salt, and your bicarbonate of soda and baking powder.
Taste and add sweetener if needed (I recommend 1 tsp sugar or syrup).
Add to an oven proof ramekin/ bowl. Add your chocolate chips, then bake for 12-15 minutes, or until risen and golden brown.
Top with a pinch of maldon salt, some milk, and serve.
Notes + Variations:
Use any nut butter you fancy for this - cashew butter just has a real buttery flavour, which makes this taste more like actual cookie.
