ONE OF THE BEST DESSERTS. TELL ME I’M WRONG.
My memory of these is either getting those GU pots, or getting lava cakes from M&S, putting them in the microwave for a minute, then dousing them in yoghurt (because cake and yoghurt is an unmatched combination, and beats custard/ice cream by a mile).

If you’ve never made a lava cake before, make these. It’s so bloody easy - I think people think they’re too hard to make, but they’re as difficult as a brownie to make, and can be done in way less time, and in a smaller quantity.

Recipe, makes 1-2, depending on the ramekins;

30g butter
40g dark chocolate, chopped
30g light brown sugar
1 egg
Tiny drop of vanilla
1 level tbsp oat flour
1 tsp plain flour

Method

  1. Preheat the oven to 180°C.

  2. Grease 2 lava cake moulds, then dust with an even layer of cocoa powder.

  3. Melt your butter and chocolate together in a bowl, stirring until smooth.

  4. Using a whisk, mix in your sugar, followed by your egg, then add your vanilla and oat flour.

  5. Pour the batter evenly between 2 moulds, then bake for 10-20 minutes, until the tops are firm, but the middles feel jiggly.

  6. Leave to set for a minute or 2, then run a knife around the edge of each one, very carefully.

  7. Tip onto a plate, top with ice cream and serve.
