Chocolate and Hazelnut cake pop energy balls
Some of the best snacks ever, and they’re great post workout.
Ps. no dates in sight - these are literally just a cake pop, packed with goodness. Almost too good to be true.
Recipe, makes 6-8 balls;
3 heaped tbsp oat flour
30g chocolate whey protein
3 heaped tbsp ground hazelnuts (or 1 tbsp hazelnut butter)
3 tbsp sugar
1 tbsp cocoa powder
1 tbsp plain yogurt
200ml milk
1/2 heaped tsp baking powder
1/4 heaped tsp bicarbonate of soda
Pinch of salt
1 tbsp nutella or other chocolate spread
1 heaped tbsp cream cheese
150g dark chocolate or hazelnut chocolate
Method
Blend 2 cups of oats until they look like fine flour - also blend 1 cup roasted hazelnuts if you don’t have ground ones already (unless you’re using hazelnut butter).
Add all the dry ingredients to a bowl and mix well.
Add the milk (and hazelnut butter if using) little by little until a cake batter forms.
Add the yogurt and mix well.
Put in a large microwave safe bowl and microwave at 1000W for 4-5 mins or until fully cooked (move around every few mins).
Spoon the mix into another bowl, and allow to cool for about 5 mins.
Add 1 tbsp cream cheese and 1 tbsp chocolate spread to the mixture and knead in with your hands until combined
Press and roll the mixture into 6-8 balls and set aside
Melt the chocolate.
Coat each ball in chocolate, and a pinch of ground hazelnuts (if you have them) and salt and leave to set in the fridge for 30 mins.
Keep in the fridge for up to 5 days in an airtight container.
Notes + Variations:
If you don’t have whey protein, you can use whichever one you have, but the whey has a massive impact on the texture and makes them cake like.
Most vegan proteins result in a dense, doughy texture, so as long as you don’t mind that, go ahead!!!
