Banana bread oats
I got some granola butter, and it is absolutely amazing. Really. You have to get some if you’re a granola fan.
These hardly take any time, and can be prepped in advance, or even made as overnight oats.
Recipe
1/2 - 1 cup oats (I always use jumbo)
1/2 banana, mashed
Splash vanilla
Double quantity of liquid to oats - I use a mix of milk and water
30g protein powder (optional)
Syrup to taste (optional)
Pinch of salt
TO TOP
1/2 banana
1 tbsp nut butter/ spread
Granola
Cinnamon
Method
To a saucepan, add all the ingredients for your oats (apart from the protein powder).
Turn to medium-high heat, then once the mixture starts to bubble, turn the heat to medium-low.
Cook for 10-15 minutes, or until significantly thickened, then once you’re happy with the texture, turn to low heat, then heat 1 tbsp oil in a frying pan on medium heat.
Slice your banana into 1cm thick slices, then add to your frying pan, and allow each slice to brown on each side - this should take 2-3 minutes on each side
Once the banana slices are browned & caramelised, add the protein powder to your oats (if using), mixing through well so there are no lumps.
Add your oats to a bowl, top with your nut butter of choice, then your banana & top with cinnamon and granola.
Notes + Variations:
Use jumbo, or quick cook oats for this - I usually use jumbo, because I prefer the texture.
Be careful when turning the heat up on the oats too if you’re using plant milk, as sometimes it can split if there are no stabilisers.
