I’ve literally never had a proper kebab, as i’m a non meat-eater, and this is pure guesswork (and cheating). Take this as the loosest recipe ever - make it your own, or follow mine exactly - it really is up to you, but use what you have in, and make it with things you like.

MY recipe, makes 2 wraps;

200g kebab style meat / veggie meat

THE SALAD
1/2 white onion, finely sliced
1 tomato, finely sliced
1/4 cucumber, finely sliced
A couple of iceberg/ little gem lettuce leaves, finely sliced

TO BUILD (per wrap)
1 kebab flatbread
1 tbsp labneh/ yoghurt/ mayo per wrap
1 tbsp honey/ hot honey/ other sauce to top
Salt and pepper

Method

  1. Add your kebab meat/ meat of choice to an airfryer, cooking to package instructions - you could also grill or fry this.

  2. In the meantime, prep your salad - finely slice all of the veg, then set aside.

  3. If you don’t have hot honey, but want some, you can make your own, adding 4 tbsp of honey to a saucepan on medium heat, with 1 tsp of chilli flakes. Once it’s heated, add 1 tbsp of lemon juice or vinegar, then a pinch of salt. Take off the heat and leave to cool.

  4. Continuously check the meat whilst it’s cooking, until you’re happy with how it’s crisped up, and check it’s fully cooked through.

  5. To assemble the kebabs - add a layer of mayo/ yoghurt to the bottom, then top with the lettuce & the rest of your salad.

  6. Top with your cooked meat, a drizzle of honey/ other sauce of choice, then serve with a wedge of lemon.

Notes + Variations:

Literally switch out everything here as you like - you could use pre-cooked meat, marinated meat, or marinate it yourself. You could also use tofu or fish, or even some mushrooms instead.
